Morning Glorious Muffins - cooking recipe
Ingredients

2 c. flour
1 1/4 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1 1/2 c. peeled and shredded apple
1 1/2 c. peeled and shredded carrot
3/4 c. coconut
1/2 c. chopped dates or raisins
1/2 chopped pecans
3 eggs, beaten
1 c. oil
1 tsp. vanilla
Preparation

Combine flour, soda,
sugar,
cinnamon and 1/2 teaspoon salt. In another
bowl, combine carrot, apple, coconut, dates and raisins.
Stir in
beaten
eggs,
oil and vanilla.
Add to dry ingredients, stirring
until moistened.
Spoon batter into muffin pans.
Bake at 375\u00b0
for
18
to 20 minutes.
Yields 24 muffins.
