Posh Squash - cooking recipe

Ingredients
    2 lb. yellow summer squash, sliced
    2 eggs, beaten
    1 c. mayonnaise
    1 c. grated Parmesan cheese
    1 small onion, chopped
    salt to taste
    1/4 tsp. pepper
    1/2 c. soft bread crumbs
    1 Tbsp. melted margarine
Preparation
    Cook squash in boiling water until tender.
    Drain thoroughly and drain again, cool slightly.
    To beaten eggs add mayonnaise, cheese, onion, salt and pepper.
    Blend well.
    Stir squash in gently.
    Pour into a buttered 1 1/2-quart casserole.
    Combine bread crumbs and melted margarine and sprinkle over the top.
    Bake at 350\u00b0 for 30 minutes or until firm.
    Makes 5 servings.
