Irish Soda Bread - cooking recipe

Ingredients
    3 c. sifted flour
    2/3 c. sugar
    1 tsp. each baking soda and salt
    2 tsp. baking powder
    1 1/2 c. seedless raisins
    2 Tbsp. caraway seed
    1 3/4 c. buttermilk
    2 eggs, beaten
    2 Tbsp. melted shortening
Preparation
    Sift together into a large bowl flour, sugar, baking soda, baking powder, and salt. Stir in raisins and caraway seed. Combine buttermilk, eggs and melted shortening. Add liquid mixture to dry ingredients and mix well, until flour is just moistened. Turn batter into a 5 1/2 x 9 1/2-inch loaf pan. Bake in 350\u00b0 oven for 50 to 60 minutes until it starts to clear side of pan. Remove from pan immediately; allow to cool. May be frozen or kept in refrigerator for some time. Delicious toasted or as is.
