Orange-Poppy Breakfast Muffin - cooking recipe

Ingredients
    1 c. flour + 2 tsp.
    1 1/2 tsp. baking soda
    2 Tbsp. poppy seed and grated orange peel
    3 eggs
    1/2 c. sugar + 2 Tbsp.
    1/4 c. melted margarine
    1 tsp. confectioners sugar
Preparation
    Preheat oven to 350\u00b0.
    Line twelve 2 1/2-inch muffin pan cups with paper baking cups; set aside.
    In small mixing bowl, sift together flour and baking powder; stir in poppy seed and orange peel and set aside.
    Using mixer, beat together eggs and granulated sugar until light and fluffy; add margarine and beat. Stir in flour mixture until moistened.
    Spoon equal amount of batter into each cup.
    Bake 15 to 20 minutes.
    Cool 10 minutes. Sift confectioners sugar over cupcakes.
    Weight Watchers:
    1 fat; 1/4 protein; 1/2 bread; 40 calories.
