Pan Roasted Garlic Potatoes - cooking recipe
Ingredients

4 medium Russet potatoes
2 Tbsp. olive oil
2 Tbsp. butter
2 cloves garlic, peeled
coarse salt and freshly ground pepper
Preparation

If desired peel potatoes.
Cut into 1-inch cubes and set aside in bowl with water to cover until ready to cook.
When ready, drain potato cubes and pat dry with paper towels.
In large skillet over high heat, heat olive oil with butter until very hot. Add garlic cloves and potato cubes and season to taste with salt and pepper.
Cover; reduce heat to low and cook, stirring occasionally, until tender, 10 to 15 minutes.
Remove cover; raise heat to high and cook, stirring occasionally until potatoes are golden and crisp, about 5 minutes longer.
Discard garlic, if desired.
Serves 4.
