Springtime Potatoes - cooking recipe

Ingredients
    1 1/2 lb. small new potatoes
    1/3 c. chopped cucumber
    1 1/2 Tbsp. chopped green onion
    2 Tbsp. chopped green pepper
    2 Tbsp. sliced radishes
    1 tsp. salt
    dash of pepper
    1/2 c. dairy sour cream
Preparation
    Wash and scrape potatoes; cook until tender in boiling salted water.
    Drain.
    Combine remaining ingredients.
    Heat, but do not boil.
    Pour sour cream mixture over hot potatoes.
    If desired, garnish with parsley.
    Serve immediately.
    Makes 4 servings.
