Sausage Bean Salad - cooking recipe

Ingredients
    1 lb. cooked kielbasa, knockwurst or pepperoni, sliced thin
    2 or 3 c. beans (garbanzos, navy or kidney)
    2 or 3 c. cooked potatoes, diced
    1 large green pepper, diced
    1 large red pepper, diced
    1 red sweet onion, diced
    1 pt. cherry tomatoes
    1/2 c. Italian dressing
    2 tsp. Dijon mustard
    boiled egg or black olives (for top garnish)
Preparation
    Mix the Italian dressing with the mustard.
    Marinate the beans, potatoes, onion and peppers in 1/4 cup of the dressing mixture. Before serving, add the sausage and tomatoes and toss with the remaining dressing.
    Serve on top of escarole or romaine lettuce.
