Shrimp Etouffee(Serves 4) - cooking recipe

Ingredients
    1 stick margarine or butter
    3 cloves garlic
    1/4 c. sherry
    2 large onions
    2 lb. shrimp
    1 can Ro-Tel tomatoes
    2 stalks celery
    1 green pepper
    salt and pepper
Preparation
    Chop all vegetables as fine as possible.
    Heat butter until bubbly and add chopped vegetables. Fry until golden brown. Add tomatoes and half juice.
    Let cook 10 minutes.
    Add shrimp (peeled), seasoning and wine.
    Lower fire and cover, letting steam 20 to 30 minutes.
    Serve over fluffy rice.
