Calcutta Chicken Salad - cooking recipe

Ingredients
    1 c. shredded coconut
    1 c. raisins, steamed or soaked in wine (just cover and drain liquid before adding to salad)
    1 c. chopped unsalted peanuts
    1 c. diced, barely ripe banana
    1 c. diced unpeeled red apple
    1 c. diced, juice packed pineapple
    1 c. sliced celery
    2 c. shredded cooked chicken
    1 c. chutney
    1 c. mayonnaise
    2 Tbsp. curry powder
    fruit to garnish (cantaloupe, candied ginger, fresh grapes or coconut slices)
Preparation
    Stir together all ingredients, except apple and banana, gently smoothing out top.
    Cover and refrigerate overnight.
    Before serving, add apple and banana and mix gently.
    Serve on lettuce lined plate.
    Garnish with any or all of the following:
    sliced cantaloupe, candied ginger, fresh grapes, toasted coconut slices.
