Cream Pie With Pecans - cooking recipe
Ingredients

1 prepared pie crust, baked
1/2 c. sugar
1/8 tsp. salt
3 eggs, separated
1 Tbsp. mandarin peel
1/2 c. pecans
1/8 tsp. salt
6 Tbsp. sugar
1/4 c. all-purpose flour
1 c. scalded milk
2/3 c. mandarin juice
1 tsp. butter
1 Tbsp. water
1/4 tsp. cream of tartar
3/4 tsp. vanilla
Preparation

Mix sugar, flour and salt.
Add milk and cook over low heat until mixture is thick.
Beat egg yolks.
Mix 1/2 cup of this mixture with egg yolks, add to milk mixture.
Add mandarin juice, mandarin peel and butter.
Stir and cook over low heat until the custard is thick.
Add pecans.
Cool custard and pour into baked pie shell.
Beat egg whites, cream of tartar and water at high speed for 3 minutes.
Gradually add sugar, 1 tablespoon at a time. When whites hold soft peaks, add salt and vanilla.
Cover custard with meringue.
Bake at 300\u00b0 for 15 to 20 minutes until golden brown.
