Italian Cod Fillets - cooking recipe

Ingredients
    1 lb. spinach, washed and trimmed
    2 cloves garlic, chopped
    3 Tbsp. olive oil, divided
    2 Tbsp. toasted pine nuts
    1 c. fresh bread crumbs
    2 Tbsp. grated Parmesan
    2 tsp. Italian seasoning
    4 (5 oz.) cod fillets
Preparation
    Heat oven to 450\u00b0.
    In 13 x 9-inch baking dish, combine first 2 ingredients and 2 tablespoons oil.
    In bowl, combine next 4 ingredients and remaining oil.
    Press mixture onto fish.
    Place on spinach.
    Cover; bake 10 minutes.
    Uncover; bake 5 minutes more or until fish flakes.
    Makes 4 servings.
