Vegetable Sandwiches - cooking recipe

Ingredients
    1 large cucumber, peeled and seeds removed
    1 bell pepper
    1 large carrot
    1 small onion
    1 envelope unflavored gelatin
    1 c. mayonnaise
    salt and pepper to taste
Preparation
    Grate vegetables coarsely, except onion, which is finely grated.
    Squeeze out the natural juices, saving 2 tablespoons. Soften gelatin in the reserved juice.
    Melt in a double boiler until gelatin is completely dissolved.
    Add to grated vegetables. Add mayonnaise; mix well.
    Add seasonings to taste.
    Refrigerate overnight before using.
    Makes 3 dozen party sandwiches.
