Rice Pie - cooking recipe

Ingredients
    1 lb. rice (River brand)
    1 pt. milk or cream
    pinch of salt
    lump of butter
    1 lb. Ricotta cheese
    6 to 8 eggs
    2 c. sugar
    juice of 1 lemon
    grated lemon peel
    1 tsp. vanilla or anise
Preparation
    Cook rice until almost done.
    Drain, but don't rinse.
    Add hot milk and let stand until milk soaks in.
    Add salt and butter. Set aside.
