Ingredients

5 c. sweet goat milk
1 c. uncooked white rice
6 Tbsp. sugar
pinch of saffron, soaked in 1 Tbsp. milk
1/2 tsp. cardamom powder
3/4 c. dried fruit (raisins, dates, apricots)
1/2 c. fresh fruit (apples, pears, bananas)
Preparation

In a saucepan, scald the milk.
Add rice and stir. Bring to a boil again.
Reduce heat and simmer, covered, for about 1 hour or until rice is soft and mixture is thick.
Add the sugar, saffron, cardamom powder and salt. Stir until the sugar is dissolved. Add dried fruit and cook until soft.
Add fresh fruit. Chill until ready to serve.
Makes 4 servings.
