Homemade Angel Food Cake - cooking recipe

Ingredients
    1 c. sifted cake flour
    1 1/4 c. granulated sugar
    egg whites (from 12 large at room temperature)
    1 tsp. cream of tartar
    1/2 tsp. pure vanilla extract
    1/2 tsp. almond extract
Preparation
    Preheat oven to 375\u00b0.
    Into large bowl, sift together flour and 3/4 cup sugar.
    Sift again.
    In clean, large bowl of standing electric mixer or in mixing bowl, place egg whites.
    Using mixer on low speed, beat egg whites until foamy, about 1 minute.
    Add cream of tartar and extracts.
    Gradually increase mixer speed to high. While beating, sprinkle in remaining 1/2 cup sugar, one tablespoon at a time.
    When all sugar has been added, use rubber spatula to scrape sides and bottom of bowl.
    Resume beating at high speed until egg whites are stiff but moist.
