Cranberry Nut Bread - cooking recipe

2 c. flour
1 1/2 tsp. baking powder
1 egg, well beaten
2 Tbsp. melted butter
1 c. chopped nuts
1 c. sugar
1/2 tsp. baking soda
1 orange (juice and rind)
2 Tbsp. boiling water
1 c. fresh cranberries, halved
Preparation

In a bowl, sift together dry ingredients. Squeeze orange juice into cup measure.
Add grated orange rind, butter and enough boiling water to make 3/4 cup.
Combine orange juice mixture and egg.
Stir liquid into dry ingredients and stir only until dry mixture is dampened.
Add chopped nuts and cranberries.
Pour into a greased 9 x 5 x 3-inch loaf pan.
Push batter up towards edges, leaving center slightly hollowed. Let batter stand for 20 minutes in pan before baking.
Bake in a preheated 350\u00b0 oven for 60 to 70 minutes.
Remove from pan and cool.
