French Bread - cooking recipe

Ingredients
    3 c. unbleached flour
    1 Tbsp. honey
    1 1/2 tsp. salt
    5 tsp. yeast
    2 c. very warm water (120~ to 130~)
    2 c. oat flour (blend oats 1/2 c. at a time)
    1/2 to 1 c. whole wheat flour
Preparation
    In a large bowl mix 2 cups unbleached flour, 2 cups oat flour, salt and yeast.
    Gradually add water and honey to dry ingredients. Mix well and let set 5 minutes.
    Add 1 cup unbleached and 1/2 cup whole wheat flour, a little at a time.
    Mix with electric mixer at medium speed as long as you can.
    Stir in additional whole wheat flour, if needed, to make a stiff dough.
    Knead 8 to 10 minutes. Let rise 20 minutes.
    Divide dough in half.
    Form long thin loaves, taper ends and place on \"Pammed\" cookie sheet.
    Take a serated knife and make slits 2 inches apart at an angle, cutting 1/2 inch into the dough.
    Bake at 375\u00b0 about 25 to 30 minutes.
    Makes 2 loaves.
