Virginia Sweet Potato Pie - cooking recipe
Ingredients

1/4 c. butter
1/2 tsp. salt
3/4 c. sugar
3 egg yolks
juice of 1 lemon
1/4 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
2 c. sweet potatoes, mashed
1 c. milk, scalded
3 egg whites
9-inch pie shell
Preparation

Blend butter, salt and sugar.
Add egg yolks, lemon juice, spices, potato pulp and hot milk.
Fold in stiffly beaten egg white.
Place in pie shell.
Bake in a hot oven (425\u00b0) for 10 minutes, then in a moderate oven (350\u00b0) for 30 to 40 minutes, until pie is firm in center.
