Fruit Cake For Diabetics - cooking recipe

Ingredients
    2 c. water
    2 c. raisins
    1 c. unsweetened applesauce
    2 eggs
    2 tsp. liquid sweetener
    3/4 c. cooking oil
    1 tsp. soda
    2 c. plain flour
    1 1/4 tsp. cinnamon
    1/2 tsp. nutmeg
    1 tsp. vanilla
Preparation
    Cook raisins in water until water is gone.
    Add the applesauce, eggs, sweetener and oil.
    Mix well.
    Blend in the other ingredients which have been sifted together.
    Add vanilla. Pour into loaf pans, sprayed with Pam.
    Use foil liners, also sprayed with Pam.
    Bake about 1 hour in a 350\u00b0 oven or until done. Makes 10 to 12 servings.
