Date And Orange Muffins - cooking recipe

Ingredients
    1 whole orange
    1/2 c. orange juice
    1/2 c. chopped, pitted dates
    1 egg
    1/2 c. butter or margarine
    1 1/2 c. all-purpose flour
    1 tsp. baking soda
    1 tsp. baking powder
    3/4 c. sugar
    1 scant tsp. salt
Preparation
    Cut orange into pieces, remove seeds and drop pieces into blender.
    Blend until rind is finely ground.
    Add juice, dates, egg and butter and give another whirl in blender.
    Sift remaining ingredients into a bowl.
    Pour orange mixture over them and stir lightly.
    Drop spoonfuls into 18 buttered muffin tins and bake in 400\u00b0 oven for about 15 minutes.
    These muffins freeze well but should be used within 8 weeks.
