Risotto Primavera - cooking recipe

Ingredients
    2 1/2 Tbsp. olive oil
    1/2 c. snow peas
    1 sweet red pepper
    1 clove garlic
    1/4 lb. cut asparagus and/or other vegetable
    1 large shallot
    1 c. orzo rice
    1/2 c. Parmesan cheese
    1/4 c. half and half
    2 c. chicken broth
Preparation
    Heat 1 1/2 tablespoons olive oil.
    Add peas, pepper, garlic and asparagus; saute until tender.
    Season with salt and pepper. Heat 1 tablespoon olive oil.
    Saute shallot.
    Add rice; cook until golden.
    Add heated chicken broth; cook until tender.
    Mix together with vegetable mixture.
    Add half and half and cheese. Salt and pepper, if desired.
    Serve.
