Zucchini Nut Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    2 c. zucchini, grated and peeled
    3 tsp. vanilla
    3 c. flour
    1 tsp. baking soda
    1/4 tsp. baking powder
    1 tsp. salt
    2 tsp. cinnamon
    1/2 c. chopped nuts
    1/2 c. raisins
Preparation
    Set oven at 325\u00b0.
    Grease and flour 2 small loaf pans.
    Beat eggs until light and foamy.
    Gradually beat in oil and sugar; fold in zucchini.
    Add vanilla and mix lightly.
    In separate bowl, mix together flour, baking soda, baking powder, salt, cinnamon, nuts and raisins.
    Add to zucchini mixture and mix well.
    Pour into 2 loaf pans and bake 1 hour at 325\u00b0.
    Makes 2 small loaves.
