Crusty Brown Rolls - cooking recipe
Ingredients

2 pkg. active dry yeast
1 3/4 c. warm water
4 tsp. sugar
2 tsp. salt
2 Tbsp. melted shortening
6 1/2 to 7 c. sifted all-purpose flour
3 egg whites, beaten stiff
egg wash
Preparation

Sprinkle yeast on warm water; stir to dissolve.
Add sugar, shortening and 2 cups flour; beat well.
Add beaten egg whites. Add remaining flour until dough leaves sides of bowl when your stir it.
Turn onto lightly floured surface.
Knead until dough is smooth and elastic and tiny blisters show in surface, about 5 minutes.
Place in a lightly greased bowl; turn dough over to grease top.
Cover with a damp cloth and let rise in a warm place until doubled, about 1 hour.
Punch down.
Let rise again until doubled, about 30 to 40 minutes.
