Yellow Squash Casserole - cooking recipe
Ingredients

2 lb. squash, cooked and mashed
1 carrot, grated
1 medium onion, chopped
2 Tbsp. pimento, chopped
1 can cream of mushroom soup
1 c. sour cream
1 stick margarine
1 pkg. Pepperidge Farm cornbread stuffing mix
Preparation

Melt margarine in saucepan; add stuffing mix.
Mix first 6 ingredients.
Add 1/2 stuffing mixture to squash mixture and mix well.
Top with remaining stuffing.
Bake in casserole dish at 325\u00b0 for 25 to 30 minutes.
