Creole Casserole - cooking recipe

Ingredients
    1 1/3 c. Minute rice
    2 c. grated Cheddar cheese
    2 1/4 c. (20 oz. can) tomatoes and juice
    1 tsp. salt
    1/4 c. fine chopped onion
Preparation
    Grease a 1 1/2-quart baking dish.
    Spread about 1/2 of the Minute rice right from the box in an even layer on bottom.
    Cover with 1 cup of grated cheese.
    Add remaining rice.
    Combine tomatoes and juice, salt and onion in saucepan, crushing tomatoes and mixing well. Bring to a boil.
    Pour over layers of rice and cheese.
    Bake, covered, in a moderate oven at 350\u00b0 for 10 minutes. Remove from oven, uncover and spoon remaining cheese onto rice mixture around edge, leaving center uncovered.
    Bake 5 minutes longer.
    Serves 4.
