Ingredients

2 1/2 c. all-purpose flour
1 c. granulated sugar
1 c. softened butter
1 egg
1 tsp. baking powder
1 Tbsp. lemon juice
2 to 3 Tbsp. lemon extract
2 Tbsp. vanilla
Preparation

In a large mixer bowl, combine all cookie ingredients.
Beat at low speed, scraping bowl often, until well mixed, 1 to 2 minutes. If desired, divide dough and color with food coloring (mix in well).
Wrap dough in waxed paper or plastic wrap.
Refrigerate until firm, 2 to 3 hours.
Preheat oven to 400\u00b0.
Roll out dough, 1/3 at a time, on a well-floured surface to 1/4-inch thickness. Cut out with cookie cutters (hearts for Valentine's Day, animal shapes for any day, Christmas shapes, etc.).
Place 1 inch apart on ungreased cookie sheets.
If desired, sprinkle colored sugars over tops or bake and decorate later with frosting.
Bake for 6 to 10 minutes, or until edges are lightly browned.
Remove immediately; cool completely.
