Egg Noodles - cooking recipe
Ingredients

3 eggs
pinch of salt (1/8 tsp.)
2 c. flour
Preparation

Beat eggs slightly; add salt and enough flour to make a stiff dough.
Knead well.
Let stand 1/2 hour, covered.
Roll out very thin.
Spread on cloth to dry.
Must not be sticky or so dry it will be brittle.
Cut into 3-inch strips.
Layer them, cut crosswise in very fine strips and toss them lightly to separate. Spread out to dry.
Put into covered jar for future use.
Drop into boiling soup 5 minutes before serving.
