Stuffed Mushrooms - cooking recipe

Ingredients
    8 to 12 large, fresh mushrooms
    1 slice white bread
    2 cloves garlic
    1 Tbsp. chopped parsley
    salt and pepper to taste
    2 eggs
    1/2 c. grated Parmesan or Romano cheese
    1/2 c. Ricotta or large curd cottage cheese
    olive oil
Preparation
    Remove stems from mushrooms and chop stems fine.
    Soak bread in a little water or milk and squeeze dry.
    Mix together chopped stems, bread, garlic, parsley, eggs, Ricotta, salt and pepper. Fill each mushroom cap with stuffing.
    Arrange stuffed mushrooms in a baking pan greased with olive oil.
    Drizzle a little olive oil over mushrooms and sprinkle with grated Parmesan cheese.
    Bake in a preheated 400\u00b0 oven for 20 minutes.
    Serve hot.
    Contains 2 mushrooms per serving.
