Pineapple Oatmeal Drops - cooking recipe

1 (1 lb. 4 oz.) can crushed pineapple
3 3/4 c. sifted all-purpose flour
1 tsp. salt or salt substitute
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. baking soda
1 1/4 c. shortening
3/4 c. packed brown sugar
3 large eggs
3 Tbsp. molasses
1 1/2 tsp. vanilla
3 c. uncooked quick oats
3/4 c. chopped walnuts
1 1/2 c. granulated sugar
Preparation

Turn undrained pineapple into 9-inch skillet.
Simmer over medium-high heat, about 15 minutes, stirring occasionally, until pineapple measures 1 1/4 cups.
Stir frequently toward end of cooking to avoid scorching.
Resift flour with next 4 ingredients. Cream shortening with sugars until fluffy; beat in eggs, one at a time.
Stir in molasses and vanilla, then flour mixture.
Add pineapple, oats and walnuts; mix well.
Drop by rounded tablespoonfuls onto lightly greased baking sheets.
Bake in center of 350\u00b0 oven until lightly browned, about 13 minutes.
Remove to wire racks to cool.
Makes 3 dozen.
