Red Beans A La Maria - cooking recipe

Ingredients
    2 lb. little red beans
    1 envelope chili mix
    1 onion, diced
    2 cloves garlic, minced
    1/2 lb. ground beef
    1 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. oregano
    8 oz. can tomato sauce or 1 c. tomato juice
    2 tsp. ginger*
Preparation
    Cover beans with water (1 cup beans to 2 cups water).
    Add salt, pepper and ginger; cook approximately 2 hours, until tender. If you soak the beans in water overnight, it will reduce cooking time.
    Saute beef, onion and garlic.
    Add chili mix, oregano and tomato sauce or juice.
    Mix well, then add to beans.
    Simmer 1 hour.
