Zucchini Bread - cooking recipe

3 eggs
1 c. vegetable oil
2 c. sugar
2 c. raw zucchini (not peeled)
2 c. flour
1/4 tsp. baking powder
2 tsp. soda
1 tsp. salt
3 tsp. cinnamon
3 tsp. vanilla
1 c. chopped nuts
Preparation

Grate zucchini. Beat eggs until light. Add sugar, oil and vanilla and blend. Stir in zucchini. Sift flour and other dry ingredients together except nuts. Blend with creamed mixture. Fold in nuts. Bake in 2 greased and floured 9 x 5 loaf pans. Bake at 350\u00b0 for 1 hour.
Makes 2 loaves.
