Ingredients

1/2 c. shortening
1 egg yolk
1 c. sifted flour
1/4 c. brown sugar
1/2 tsp. vanilla
1/4 tsp. salt
Preparation

Mix together shortening, brown sugar, egg yolk and vanilla. Gradually add flour and salt to mixture.
Chill dough a little. Roll in 1-inch balls.
Dip in slightly beaten egg white and roll in finely chopped nuts or coconut.
Place 1-inch apart on ungreased cookie sheet.
Bake for 5 minutes.
Remove from oven. Press thumb gently on center of each cookie.
Return to oven and bake 8 minutes more.
When cool, fill center with tinted powdered sugar icing.
Bake at 375\u00b0.
Yields 2 dozen.
