Judged As Favorite Pasta Salad - cooking recipe
Ingredients

1 pkg. pasta (spirals are nice)
1 Tbsp. oil
1 medium bell pepper, chopped finely
1 onion, chopped finely
1/2 to 1 c. sweet relish
1 carrot, shredded
1 (8 oz.) jar pimentos, chopped finely
1/2 to 1 c. mayo
1 can Spam, diced or tuna, drained
6 eggs, boiled and chopped
1 can sweet peas, drained
1 c. diced cheese (Cheddar or Co-Jack)
Preparation

Boil pasta (add 1 tablespoon oil to water to prevent boiling over).
While pasta cooks, cut up vegetables, eggs and meat.
When you add other ingredients to cooked pasta, let eggs be last to put into bowl.
Liberally sprinkle any spices you have that compliment salads.
Stir all ingredients and add mayonnaise.
Chill overnight if possible.
Keeps up to two weeks in refrigerator and gets better as it ages.
Store in airtight container.
