Low-Fat Buttermilk Caramels - cooking recipe

Ingredients
    3 c. sugar
    1 c. buttermilk
    1 tsp. vanilla
    1/2 c. light Karo
    1 tsp. soda
    3/4 c. chopped nuts (optional)
Preparation
    Mix sugar, buttermilk, and Karo in large pan, 4-quart or larger.
    Bring to a boil (it boils high).
    Add soda and cook until soft to firm ball stage.
    Remove from heat.
    Add nuts and vanilla. Beat until it loses its glaze.
    Pour into buttered pan.
    Cut into squares.
