Ingredients

2 eggs
2 1/4 c. flour
1 c. softened butter
1/4 c. sugar
1 (3 1/2 oz.) box butterscotch instant pudding mix
1 tsp. baking soda
3/4 c. brown sugar, packed
1 tsp. vanilla flavoring
1 c. chopped walnuts or pecans
Preparation

In small bowl, combine flour and baking soda; set aside.
In larger bowl, combine butter, sugars, vanilla and pudding mix. Beat until mixture becomes creamy and smooth.
Beat in eggs. Gradually add in flour mixture, 1 cup at a time.
Stir in nuts (optional).
Drop by teaspoons onto cookie sheet.
Bake at 375\u00b0 for approximately 9 to 12 minutes.
