Morning Glory Muffins - cooking recipe

Ingredients
    2 c. flour
    1 1/4 c. sugar
    2 tsp. baking soda
    2 tsp. cinnamon
    1/2 tsp. salt
    2 c. grated carrots
    1/2 c. raisins
    1/2 c. coconut
    1/2 c. pecans, chopped
    3 eggs
    1 c. oil
    1 apple, shredded
    2 tsp. vanilla
Preparation
    Combine flour, sugar, baking soda, salt and cinnamon.
    Stir in carrot, raisins, coconut and pecans.
    In separate bowl, combine eggs, oil, apple and vanilla.
    Add to flour mixture.
    Stir only until combined.
    Spoon in muffin cups.
    Bake at 350\u00b0 for 15 to 18 minutes.
    Yield: 18 muffins.
