Pina Colada Salad(Diabetic) - cooking recipe
Ingredients

1 (11 oz.) can Mandarin oranges, drained, reserve liquid
1 (8 oz.) can pineapple chunks in own juice, drain and reserve juice
1 small banana, sliced and sprinkled with 1 tsp. lemon juice
1 envelope whipped topping mix
1/2 tsp. vanilla extract
1/2 tsp. rum extract or 2 Tbsp. toasted coconut
Preparation

Combine oranges, pineapple and banana in medium bowl.
Whip low calorie topping with 1/2 cup fruit liquid (all of pineapple juice and enough orange liquid to make 1/2 cup).
Whip in vanilla and rum extracts.
Fold into fruit mixture; sprinkle with coconut.
Chill several hours before serving.
Yields 4 servings.
