Creole Eggplant - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1/2 c. onion, chopped
    2 cloves garlic, minced
    1/2 c. green pepper, chopped
    1 1/2 c. canned tomatoes
    1 small or medium eggplant, peeled and cubed
    1 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. cayenne pepper
    2 Tbsp. melted butter or margarine
    breadcrumbs, optional
Preparation
    Saute onion in olive oil and butter.
    Add garlic, green pepper, tomatoes, eggplant, salt, and peppers.
    Cover and cook over medium heat for 10 minutes.
    Uncover and cook until thick, stirring occasionally.
    If desired, at serving time, add breadcrumbs to thicken.
    Yields 4 servings.
    Serve over rice.
    It is an excellent side for seafood.
