Bean Soup - cooking recipe

Ingredients
    1 lb. dry beans
    2 grated carrots
    1 grated medium onion
    2 stalks celery, diced
    2 small bay leaves
    1 ham bone or ham slice (no salt)
Preparation
    Pick over beans, discarding bad ones.
    Rinse well. Place ingredients in Dutch oven.
    Cover with 2 quarts water.
    Bring to boil, reduce heat.
    Cover.
    Simmer 2 1/2 to 3 hours or until tender.
    More water may be needed.
    Remove meat from bone; discard bone and bay leaves.
    Season with salt and pepper to taste.
    (If salt is added to beans during cooking, beans will not cook to desired consistency.)
    Freezes very well.
