Pasta With Shrimp, Tomato And Arugula(Double For 2) - cooking recipe
Ingredients

2 Tbsp. olive oil
1/2 lb. shrimp, shelled and deveined
2 large garlic cloves, minced
1/4 tsp. dried hot red pepper flakes or to taste
1 onion, chopped fine
4 plum tomatoes, chopped
1/2 c. dry white wine
1/2 c. chicken broth
1/4 c. heavy cream
1 bunch arugula, stems discarded and leaves washed well, spun dry and chopped
3 Tbsp. minced fresh parsley leaves
1/2 lb. fettuccine or spaghetti
salt and pepper
Parmesan cheese
Preparation

In a heavy skillet, heat the oil over moderately high heat until it is hot, but not smoking.
In it, saute the shrimp, the garlic and the pepper flakes, stirring for 1 to 2 minutes or until the shrimp are pink and almost cooked through and transfer the shrimp with a slotted spoon to a bowl.
