Southern Cornbread - cooking recipe
Ingredients

1 c. sifted flour
3/4 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
1 c. yellow cornmeal
1/4 c. oil
2 Tbsp. light brown sugar
2 eggs, well beaten
1 1/2 c. buttermilk
2 Tbsp. bacon drippings or oil
Preparation

Heat oven to 435\u00b0.
Sift first 4 ingredients in medium mixing bowl.
Add cornmeal.
Combine 1/4 cup oil, brown sugar and eggs. Add buttermilk to this and then combine with dry ingredients. Beat only until smooth.
Cover bottom of 10-inch cast-iron skillet with bacon drippings.
Heat on top of stove until very hot.
Pour batter in skillet.
Immediately put in oven.
Bake 25 to 30 minutes.
Remove from skillet so that crust is on top.
(This is good to use in any cornbread dressing.)
