Double Crust Coconut Pie - cooking recipe

Ingredients
    4 c. frozen coconut
    pastry for 2 crust pie
    1 c. sugar
    1 tsp. salt
    1/2 c. light cream, evaporated milk or coconut milk
    3 egg whites
Preparation
    Thaw coconut.
    Line a 9-inch pie plate with pastry.
    Preheat oven to 400\u00b0.
    Combine sugar, coconut, salt and cream.
    Beat egg whites until stiff peaks form.
    Gently fold into coconut mixture. Spoon into prepared pie plate and cover with top crust.
    Brush lightly with milk or cream.
    Bake for 30 minutes.
