Pickle Pinwheels - cooking recipe

Ingredients
    2 gal. cucumbers
    2 c. pickling lime
    8 1/2 qt. water
    1 c. vinegar
    1 Tbsp. alum
    3 Tbsp. red food coloring
    3 c. vinegar
    3 c. water
    15 c. sugar
    8 sticks cinnamon
    1 c. Brachs red hots
    cinnamon hearts
Preparation
    Peel cucumbers and slice 1/2-inch thick.
    Remove seed.
    Mix together lime and 8 1/2 quarts water.
    Add cucumber rings and put into two 1-gallon jars.
    Soak 24 hours.
    Drain and wash well in two waters.
    Cover cucumber rings with water and soak 3 hours.
    Mix together 1 cup vinegar, 1 tablespoon alum and 3 tablespoons red food coloring.
    Add enough water and cover cucumbers.
    Simmer 2 hours.
    Drain; discard water.
    Mix together remaining ingredients and heat.
    Pour over cucumbers.
    Let sit 24 hours.
    Drain and reheat liquid (do not boil).
    Pour over cucumbers.
    Put lid on for steam and let sit for 24 hours.
    Heat liquid and cucumbers together and put in jars and seal.
