Chewy Macaroon Pie - cooking recipe
Ingredients

2 eggs, separated
1/4 tsp. salt
1 c. sugar
1/4 c. milk, evaporated
2 Tbsp. butter or margarine, melted
1 tsp. lemon juice
1/8 tsp. almond extract
1/8 tsp. vanilla extract
1 c. flaked coconut or 1 pkg. fresh frozen coconut
1 unbaked pie shell
Preparation

Preheat oven to 375\u00b0.
Beat egg yolks and salt together. Add sugar,
1/2
cup
at
a time, until blended.
Beat in milk, butter, lemon juice and extracts.
Beat egg whites until stiff. Fold beaten egg whites and coconut into egg yolk mixture.
Pour filling into pie shell.
Bake on baking sheet for 30 minutes or until knife inserted near rim comes out clean.
Cool.
