Beans And Rice Salad - cooking recipe

Ingredients
    1 (15 oz.) can black beans, drained
    1/4 c. commercial Italian salad dressing
    1/4 tsp. pepper
    3/4 c. long grain rice (uncooked)
    1/4 c. commercial Italian salad dressing
    lettuce leaves
    3/4 c. (3 oz.) shredded Cheddar cheese
    3 green onions, thinly sliced
    1 medium tomato, chopped
    sour cream (optional)
Preparation
    Combine the first 3 ingredients; cover and chill at least 8 hours.
    Cook rice according to package, omitting salt if desired. Rinse with cold water; drain.
    Combine rice and 1/4 cup salad dressing, stirring well.
    Chill at least 8 hours.
    Spoon rice onto individual lettuce-lined plates.
    Spoon bean mixture over rice. Top with cheese, green onions, tomato and, if desired, sour cream. Makes 4 servings.
