Not Fried Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    1/2 c. oil
    3/4 c. seasoned bread crumbs
    1/4 c. Parmesan or Romano cheese
    1/4 tsp. salt
    1/8 tsp. pepper
Preparation
    Slice eggplant into 1/2-inch slices, then those into inch by 4-inch strips.
    Toss the strips in oil, then into a mixture of seasoned bread crumbs and Parmesan or Romano cheese, then salt and pepper.
    Put them on a foil lined cookie sheet and bake them in a preheated oven at 375\u00b0 for 30 minutes until crisp and golden.
