Sicilian Stir-Fry - cooking recipe

Ingredients
    1 1/2 to 2 lb. collard greens (use mustard greens, collard greens, kale, Swiss chard or a combination of all), wash and rinse well, pat dry, cut out stems and cut into small pieces
    1/4 c. pine nuts
    1/4 c. Sonoma sun dried tomatoes, cut into small pieces after soaking
    1/4 c. olive oil or Pam spray, if you prefer
Preparation
    Heat olive oil in large skillet or electric frypan over medium heat.
    Soak dried tomatoes in hot water (save liquid).
    Add nuts to oil in pan and stir-fry until lightly browned.
    Add tomatoes and stir-fry.
    Add prepared greens and stir-fry.
    You can add liquid from tomatoes, if needed.
    Prepare 20 minutes before serving.
    Good with beef, fish or poultry.
    Serves 4 to 6.
