Fillet Of Sole Parmesan - cooking recipe
Ingredients

1/2 c. grated Parmesan cheese
1/4 c. butter at room temperature
3 Tbsp. mayo
3 Tbsp. chopped scallions
1/4 tsp. salt
dash of Tabasco sauce
2 lb. sole fillets or any white fish
2 Tbsp. lemon juice
Preparation

Combine cheese, butter, mayo, scallions, salt and Tabasco. Set aside.
Place fish fillets, single layer, in buttered baking dish.
Brush with lemon juice and let stand 10 minutes.
Broil fillets 3 to 4 inches from heat for 4 to 5 minutes.
Spread with cheese mixture and broil 2 to 3 minutes longer or until golden brown.
