Spinge(Italian Fritters) - cooking recipe

Ingredients
    4 eggs
    1 lb. Ricotta
    1/2 c. sugar
    1 Tbsp. vanilla
    2 c. flour
    3 tsp. baking powder
Preparation
    Mix first 4 ingredients.
    Add flour and baking powder.
    Blend until smooth.
    Drop by tablespoon into deep hot oil.
    Fry until golden and cooked through.
    Drain on paper towels.
    Sprinkle with confectioners sugar.
    Serve warm.
