Potato Boats - cooking recipe

Ingredients
    3 large baking potatoes
    1/2 c. green beans (can)
    1/2 c. carrots (can)
    1/2 lb. ground beef
    salt to taste
    1 small onion, chopped
    1/2 c. whole corn (can)
    1/2 c. peas (canned)
    3 Tbsp. oil
    pepper to taste
Preparation
    Cut potatoes lengthwise to make boats.
    Using a spoon, scrape raw potatoes to scoop out a well in potatoes, leaving about 1/4-inch thick shell.
    Brown ground beef and drain off grease. Cook the potatoes you scraped out with the onion in the oil until brown.
    Mix all the cooked vegetables and ground beef.
    Put potatoes in baking dish.
    Spoon mixture into the well of the potato boat.
    Pour 1/2 cup water over and around potatoes.
    Cover and bake at 375\u00b0 for 30 minutes or until potatoes are done. Serves 6 people.
